The U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) issued a recall for approximately 6,768 pounds of raw ground beef produced by Valley Meats, LLC on December 22, 2023, due to potential E. coli contamination. The affected products, bearing the establishment number "EST. 5712," were distributed to Illinois, Indiana, Iowa, and Michigan for further distribution to restaurants and grocers.

Symptoms of E. coli poisoning, which may manifest in anywhere from two to eight days after exposure, include dehydration, bloody diarrhea, abdominal cramps, and fever. While there have been no reported illnesses associated with the contaminated meat, routine testing led to the discovery of E. coli, prompting the recall.

Consumers are urged to check their fridges and freezers for recalled products with specific details like product codes, run numbers, date codes, use-by dates, and time stamps. Even if no illnesses have been reported, it is advised to dispose of or return the products to the place of purchase. Restaurants in the affected areas are also advised to check their stock.

In rare cases, individuals, especially older adults and children under 5, may develop hemolytic uremic syndrome (HUS), a severe complication marked by easy bruising, pallor, and decreased urine output. Those experiencing such symptoms should seek emergency medical care.

To prevent E. coli poisoning, the FSIS recommends cooking ground beef to an internal temperature of at least 160°F and using safe food handling practices, such as proper handwashing, avoiding cross-contamination, and not leaving raw meat or cooked foods at room temperature for more than two hours.
